Choco Berry Glow Bites

Ingredients

Quantity (g / ml / measure) Ingredients
80 g (½ cup) Medjool dates, pitted
40 g (½ cup) Rolled oats
15 g (1 tbsp) Ground flaxseed
15 g (1 tbsp) Chia seeds
20 g Dried strawberries, chopped
20 g Dark chocolate, finely chopped
15 g (1 tbsp) Pistachios, chopped
10 g (1 tbsp) Shaved coconut
10 ml (2 tsp) Coconut oil
5 g (1 tsp) Cocoa powder
5 ml (1 tsp) Vanilla extract
Pinch Sea salt
Optional Extra shaved coconut for rolling

Instructions

  1. Add dates, oats, flaxseed, chia seeds, cocoa powder, coconut oil, vanilla, and sea salt to a food processor.
  2. Blend until sticky and combined.
  3. Fold through dark chocolate, dried strawberries, pistachios, and shaved coconut.
  4. Roll mixture into small bite-sized balls.
  5. Optional - Roll in extra shaved coconut if desired.
  6. Refrigerate for 20 minutes before serving.
  7. Store chilled in an airtight container.
