Comforts Beef & Garden Stew

Quantity (g / ml / measure) Ingredients
120 g Lean beef, cubed
150 ml Beef broth, low sodium
80 g Baby potatoes, halved
50 g Carrot, chopped
40 g Celery, sliced
40 g Pumpkin, cubed
30 g Onion, diced
30 g (1 cup) Spinach or kale
10 ml (2 tsp) Olive oil
5 g (1 tsp) Tomato paste
5 g (1 tsp) Fresh thyme or rosemary
2 g (½ tsp) Smoked paprika
2 g (½ tsp) Turmeric
1 g (¼ tsp) Fenugreek seeds (optional)
Pinch Himalayan salt & black pepper
Optional Fresh parsley

Instructions

  1. Heat olive oil in a saucepan or pot over medium heat.
  2. Add beef and cook until lightly browned on all sides.
  3. Add onion, celery, carrot, pumpkin, and fenugreek seeds if using. Sauté for 3–4 minutes until softened.
  4. Stir through tomato paste, smoked paprika, turmeric, thyme, salt, and pepper.
  5. Pour in beef broth and add potatoes.
  6. Bring to a gentle simmer, cover, and cook for 25–30 minutes until beef and vegetables are tender.
  7. Stir through spinach or kale during the final few minutes until wilted.
  8. Finish with fresh parsley if desired.
  9. Serve warm and nourishing.
