| 80 g | Mushrooms, sliced |
| 30 g | Shallots, finely sliced |
| 40 g | Baby spinach |
| 250 ml (1 cup) | Chicken or vegetable stock |
| 80 ml | Coconut milk |
| 10 ml (2 tsp) | Olive oil |
| 5 g (1 tsp) | Fresh thyme |
| 5 g (1 tsp) | Nutritional yeast or parmesan |
| Pinch | Sea salt & black pepper |
| Optional | Fresh parsley |
Instructions
- Heat olive oil in a saucepan over medium heat.
- Add shallots, mushrooms, and thyme. Sauté until softened and fragrant.
- Add sliced chicken and cook until lightly golden.
- Stir through rolled oats.
- Gradually pour in stock while stirring gently.
- Simmer for 8–10 minutes, stirring occasionally, until creamy.
- Stir through coconut milk and spinach until wilted.
- Add nutritional yeast or parmesan and season with salt and black pepper.
- Finish with fresh parsley if desired.
- Serve warm and comforting.
