Ingredients

80 g (¾ cup) Rolled oats
120 g Chicken breast, sliced
80 g Mushrooms, sliced
30 g Shallots, finely sliced
40 g Baby spinach
250 ml (1 cup) Chicken or vegetable stock
80 ml Coconut milk
10 ml (2 tsp) Olive oil
5 g (1 tsp) Fresh thyme
5 g (1 tsp) Nutritional yeast or parmesan
Pinch Sea salt & black pepper
Optional Fresh parsley

Instructions

  1. Heat olive oil in a saucepan over medium heat.
  2. Add shallots, mushrooms, and thyme. Sauté until softened and fragrant.
  3. Add sliced chicken and cook until lightly golden.
  4. Stir through rolled oats.
  5. Gradually pour in stock while stirring gently.
  6. Simmer for 8–10 minutes, stirring occasionally, until creamy.
  7. Stir through coconut milk and spinach until wilted.
  8. Add nutritional yeast or parmesan and season with salt and black pepper.
  9. Finish with fresh parsley if desired.
  10. Serve warm and comforting.
