Salmon Bowl
- Prepare black rice according to package instructions if not already cooked.
- Cook or grill salmon until fully cooked, then flake into pieces.
- Lightly steam edamame if needed.
- In a bowl, layer black rice, spinach leaves, shredded carrot, and edamame.
- Top with flaked salmon.
- Drizzle with ginger sauce before serving.
- Serve fresh or slightly warm.
Ginger Sauce Instructions
- Add olive oil, sunflower oil, soy sauce, lime juice, rice vinegar, grated ginger, and honey to a bowl or blender.
- Whisk or blend until well combined and slightly emulsified.
- Taste and adjust lime or honey if desired.
- Store in an airtight container in the refrigerator for up to 5 days.
