Glow Beef & Garden Stir-Fry

Quantity (g / ml / measure) Ingredients
120 g Lean beef strips
80 g (½ cup) Brown rice
40 g Baby marrow (zucchini), sliced
40 g Carrot, sliced
40 g Red capsicum, sliced
30 g (1 cup) Spinach
30 g Mushrooms, sliced
5 ml (1 tsp) Olive oil
10 ml (2 tsp) Low sodium soy sauce
5 ml (1 tsp) Lime juice
5 g (1 tsp) Fresh ginger, grated
Pinch Himalayan Salt & black pepper
Optional Fresh coriander or sesame seeds

Instructions

  1. Heat olive oil in a pan or wok over medium-high heat.
  2. Add beef strips and cook for 3–4 minutes until browned. Remove and set aside.
  3. In the same pan, add ginger, baby marrow, carrot, capsicum, and mushrooms. Stir-fry for 3–4 minutes until tender-crisp.
  4. Add spinach and cook briefly until wilted.
  5. Return beef to the pan and stir through soy sauce and lime juice.
  6. Serve over brown rice or cauliflower rice.
  7. Finish with coriander, sesame seeds, or chilli flakes if desired.
