Glow Beef & Garden Stir-Fry

| 120 g | Lean beef strips |
| 80 g (½ cup) | Brown rice |
| 40 g | Baby marrow (zucchini), sliced |
| 40 g | Carrot, sliced |
| 40 g | Red capsicum, sliced |
| 30 g (1 cup) | Spinach |
| 30 g | Mushrooms, sliced |
| 5 ml (1 tsp) | Olive oil |
| 10 ml (2 tsp) | Low sodium soy sauce |
| 5 ml (1 tsp) | Lime juice |
| 5 g (1 tsp) | Fresh ginger, grated |
| Pinch | Himalayan Salt & black pepper |
| Optional | Fresh coriander or sesame seeds |
Instructions
- Heat olive oil in a pan or wok over medium-high heat.
- Add beef strips and cook for 3–4 minutes until browned. Remove and set aside.
- In the same pan, add ginger, baby marrow, carrot, capsicum, and mushrooms. Stir-fry for 3–4 minutes until tender-crisp.
- Add spinach and cook briefly until wilted.
- Return beef to the pan and stir through soy sauce and lime juice.
- Serve over brown rice or cauliflower rice.
- Finish with coriander, sesame seeds, or chilli flakes if desired.
