Apricot couscous

240 ml (1 cup)

Chicken stock

150 g (1 cup)

Couscous,  

60 g (½ cup)

Dried apricots, chopped

50 g (¼ cup)

Optional Red onion, diced

40 g (4 tbsp)

Almonds

8 g (2 tbsp)

Fresh parsley, chopped

5 g (1 tbsp)

Olive oil

2 g (1 tsp)

Lemon zest

1g (Pinch)

Salt and black pepper

Instructions

  1. Combine olive oil, lemon juice, garlic, smoked paprika, salt, and onion powder in a bowl.
  2. Coat chicken breast in the marinade and allow to marinate for at least 20 minutes.
  3. Cook chicken in a pan or grill over medium heat until golden and fully cooked through. Slice before serving.
  4. Heat olive oil in a saucepan and sauté red onion until softened.
  5. Add chicken stock and bring to a gentle boil.
  6. Stir in couscous, remove from heat, cover, and allow to absorb for 5 minutes.
  7. Fluff couscous with a fork and stir through apricots, almonds, parsley, lemon zest, salt, and pepper.
  8. Serve chicken over apricot couscous with yoghurt on the side.
