Halloumi & Fig Brown Rice Nourish Bowl

Asparagus, trimmed

Zucchini, sliced into ribbons or half moons

30 g (1 cup)

Baby spinach

Cherry tomatoes, halved

1 fresh fig (50 g)

Quartered

5 ml (1 tsp)

Olive oil

1 tsp

Toasted pumpkin seeds (optional garnish)

 

Fresh Lemon, Honey & Balsamic Dressing

Fresh lemon juice

5 ml (1 tsp)

Extra virgin olive oil

5 ml (1 tsp)

Honey

1 tbsp

Balsamic Vinegar 

Pinch

Sea salt

Pinch

Black pepper

Method

  1. Cook brown rice according to packet instructions.
  2. Lightly grill or sauté the asparagus and zucchini until just tender.
  3. Grill the halloumi in a non-stick pan for 2–3 minutes per side until golden.
  4. In a serving bowl, arrange spinach, brown rice, asparagus, zucchini, tomatoes and fresh fig.
  5. Top with the grilled halloumi.
  6. Whisk together all dressing ingredients until smooth.
  7. Drizzle over the bowl and garnish with pumpkin seeds if desired.
