Method
- Cook brown rice according to packet instructions.
- Lightly grill or sauté the asparagus and zucchini until just tender.
- Grill the halloumi in a non-stick pan for 2–3 minutes per side until golden.
- In a serving bowl, arrange spinach, brown rice, asparagus, zucchini, tomatoes and fresh fig.
- Top with the grilled halloumi.
- Whisk together all dressing ingredients until smooth.
- Drizzle over the bowl and garnish with pumpkin seeds if desired.
