Optional - Peanuts, unsalted, chopped

5 g (2.5 tbsp)

Coriander, fresh leaves

100 g (½ cup)

Chicken stock

50 g (½ cup)

Lime zest

45 g (3 tbsp)

Yellow curry paste

20 g (2 tbsp)

Fresh ginger, grated  

20 g (1 tbsp)

Sunflower oil

1 tbsp 

Dried fenugreek leaves

 Instructions

·       In a small pan, make the sauce by combing all yellow curry ingredients.

·       Pour sauce over cooked chicken strips and add sliced red capsicum, spring onions, and chopped peanuts (optional).

·       Garnish with fresh coriander and serve with jasmine rice and lime on the side.
