| 40 g | Carrot, sliced |
| 40 g | Celery, sliced |
| 30 g | Onion, diced |
| 30 g (1 cup) | Kale or spinach |
| 40 g | Brown rice or quinoa, cooked |
| 5 ml (1 tsp) | Olive oil |
| 5 g (1 tsp) | Fresh ginger, grated |
| 2 g (½ tsp) | Turmeric |
| 1–2 g (½ tsp) | Fenugreek |
| Pinch | Sea salt & black pepper |
| Optional | Fresh parsley or lemon juice |
Instructions
- Heat olive oil in a saucepan over medium heat.
- Add onion, carrot, celery, ginger, and fenugreek seeds. Sauté for 3–4 minutes until softened and fragrant.
- Stir through turmeric and cook for 30 seconds.
- Pour in chicken broth and bring to a gentle simmer.
- Add shredded chicken and cooked rice or quinoa.
- Simmer for 8–10 minutes to allow the flavours to develop.
- Stir through kale or spinach until wilted.
- Season with sea salt and black pepper.
- Finish with fresh herbs or a squeeze of lemon if desired.
- Serve warm and nourishing.
