30 g (1 cup) Spinach
60 g (½ medium)

Tomato, diced

Option Sun Dried Tomatoes

25 g Feta cheese, crumbled
5 ml (1 tsp) Olive oil
Pinch Sea salt & black pepper
Optional

Instructions

  1. Whisk eggs with salt and pepper.
  2. Heat olive oil in a non-stick pan over medium heat.
  3. Add spinach and cook until wilted.
  4. Add tomato and cook for 1 minute.
  5. Pour in eggs and gently cook, lifting the edges as it sets.
  6. Sprinkle feta over one side.
  7. Fold the omelette and cook for another 30 seconds.
  8. Serve warm.
