Instructions
- Whisk eggs with salt and pepper.
- Heat olive oil in a non-stick pan over medium heat.
- Add spinach and cook until wilted.
- Add tomato and cook for 1 minute.
- Pour in eggs and gently cook, lifting the edges as it sets.
- Sprinkle feta over one side.
- Fold the omelette and cook for another 30 seconds.
- Serve warm.
