Instructions
- Heat olive oil in a non-stick pan over medium heat.
- Add tomato and cook for 1–2 minutes until softened.
- Add spinach and sauté until wilted.
- Whisk eggs with salt and pepper.
- Pour eggs into the pan and gently scramble until cooked to your liking.
- Sprinkle with herbs & Balsamic Vinegar Drizzle
