Sunrise Scrambled Eggs

Quantity Ingredients
2 Eggs
30 g (1 cup) Spinach
60 g (½ medium) Tomato, diced
5 ml (1 tsp) Olive oil
Pinch Sea salt & black pepper
Optional Herbs &  Balsamic Vinegar Drizzle

Instructions

  1. Heat olive oil in a non-stick pan over medium heat.
  2. Add tomato and cook for 1–2 minutes until softened.
  3. Add spinach and sauté until wilted.
  4. Whisk eggs with salt and pepper.
  5. Pour eggs into the pan and gently scramble until cooked to your liking.
  6. Sprinkle with herbs & Balsamic Vinegar Drizzle
